It is especially important for elderly adults with physical limitations who rely on family caregivers and senior care providers for help with daily household duties like cleaning and meal preparation.

Those who prepare meals should stick to gluten-free recipes for the health and wellness of the aging adult. Here are three recipes that family caregivers and senior care providers can prepare for aging adults with celiac disease that will also deliver top nutrients and leave them feeling satisfied, too.

Sweet Potato Skillet

1/2 lb. gluten-free pork sausage

3 C diced sweet potatoes

2 C diced zucchini

1/2 C chopped onion

1/2 green bell pepper, chopped

5 oz. sliced mushrooms

4 eggs

Salt and pepper to taste

 

Preheat oven to 400 degrees. In an oven-safe skillet, brown the sausage using medium heat until no longer pink.

Remove the sausage from the pan and set aside. Add sweet potatoes to the leftover fat, cooking until just softened. Add the zucchini, onion, bell pepper and mushrooms. Stir frequently over medium-high heat until just softened. Add cooked sausage and mix together. Using the back of a large spoon, press four wells into the sweet potato mixture. Crack one egg into each well. Set the skillet into the oven and bake for 12 minutes or until eggs set. Serves two.

Chicken and Seasoned Vegetables

2 C cooked cubed chicken

1 tablespoon olive oil

2 C green beans, approximately 1-inch pieces

1/2 C red pepper strips

1/2 C sliced carrots

1/2 C sliced onion

1 C broccoli florets

1 C favorite liquid seasoning or dressing (such as lemon pepper or teriyaki)

Salt and fresh ground pepper to taste

 

In a 12-inch skillet over medium-high heat, cook the cubed chicken in the oil until it starts to brown and is heated through. Remove the chicken.

Add the green beans, pepper, carrots, onion, and broccoli, stirring frequently until softened. Add chicken and liquid seasoning and stir until combined thoroughly.

In a 12-inch skillet over medium-high heat, cook the sausages until they start to brown and are heated through. Place the sausages on a plate and cover with foil.

In the same skillet, warm the desired fat and then add the asparagus, mini peppers, and onion. Sprinkle with sea salt and pepper and cook until the veggies start to soften, but are still crisp. This should take no more than 4-6 minutes.

Place the sausages back in the pan with the veggies and toss to combine. Remove from heat and serve immediately.

If asparagus isn’t affordable or available, you can substitute 3-4 cups of frozen green beans. This is a really versatile dish. Don’t be afraid to bulk it up with more veggies to serve more people.
